A fortified (20%) sweet, light-brown white wine from the island of the same name, with a characteristic stewed aroma and flavour, obtained by a particular means of production in estufas as they are known, in which the wine is heated for a long period. The wine has very high acidity, and due to the method of production it will never ‘go off’.
